Kaijah Lounge is an exciting new Afro-Southern grill and cocktail lounge launching in Moston, Manchester. We’re bringing the bold, vibrant flavours of Southern African, Nigerian, and Brazilian-style grilling into a modern, elevated dining experience — and we’re looking for visionary grillers to lead our kitchen from day one.
This is a rare opportunity to shape the culinary direction of a brand-new restaurant with a bold concept and a unique cultural edge.
ABOUT THE ROLE
We’re seeking a confident and experienced cook with:
- A strong background in Southern African, Nigerian, and/or Brazilian-style grilling
- The ability to modernise traditional dishes without losing authenticity
- Leadership skills to run a high-performing kitchen team
- A passion for creating memorable, flavour-forward dishes that stand out
KEY RESPONSIBILITIES
- Lead and manage the kitchen team, including recruitment, training, and day-to-day operations
- Design and execute a vibrant, modern grill menu rooted in Afro-Brazilian traditions
- Ensure consistency in taste, presentation, and quality across all dishes
- Control stock, inventory, and food costs efficiently
- Maintain high standards of hygiene, food safety, and cleanliness
- Collaborate with management on seasonal specials and menu innovation
- Train junior chefs on grilling techniques, flavour profiles, and modern plating
REQUIRED EXPERIENCE & SKILLS
- Minimum 3–5 years’ experience as a Head Chef or Senior Sous Chef
- Proven experience with open-flame and charcoal grilling techniques
- In-depth knowledge of ingredients, flavours, and dishes from:
- Southern Africa (e.g., braai, boerewors, pap, chakalaka)
- Nigeria (e.g., suya, grilled meats , peppered fish, jollof rice)
- Brazil (e.g., churrasco, picanha, farofa)
- CUISINES NOT LIMITED BUT IF YOU CAN ADAPT or MODERNISE.
- Creative flair with a passion for modern presentation and fusion twists
- Strong leadership and communication skills
- Organised, calm under pressure, and confident managing a busy kitchen
- Level 2 or 3 Food Hygiene Certificate (preferred)
